Why is pork fat haaram?

In the Quran it says that the meat of swine is haaram so why can't we eat pork fat and things like gelatin because that is not the meat. Allah knows best so make things that are halal haaram and things that are halal haaram. If I am wrong I would love to be corrected with proof if possible.
